Oh, and I used my pressure cooker to quick-soak the beans. The times given here are definitely NOT long enough for dry beans from scratch. No white flour here. This bread is not heavy like most 100% whole wheat breads. If it is you used too much flour and your dough was too stiff. If it flattens out and won't stand up you need more flour. Place the first five ingredients in the bowl and mix.&lt;br /&gt;2. Add: 2 Cups 100% Whole Grain Wheat Flour. (to cool the water and end up with warm dough) Mix then add 2 Tbs of Dry Active Yeast.&lt;br /&gt;3. Add: 4 Cups of 100% Whole Grain Wheat Flour.&lt;br /&gt;4. Mix until the consistency is some what even. Then continue to slowly add flour 1/2 Cup at a time until the dough quits sticking to the sides of the bowl. It should be tacky to the touch. The trick is to have enough consistency to stand up with the least amount of flour so the bread will be fluffy. It will most likely be 6 1/2 cups but in any case do not exceed 7 1/2 cups of wheat flour. You can trade one cup of wheat flour for one cup of all purpose white if you wish. Don't over mix or the bread will be tough.&lt;br /&gt;5. When your dough is finished, leave it in the mixer, cover the bowl and let it rise for about 30-45 minutes. The dough will be larger but it doesn't need to double.&lt;br /&gt;6. Grease two bread pans with Crisco. You can also flour the pans to reduce sticking.&lt;br /&gt;7. Mix the dough again just enough to knock it down at least close to the original size.&lt;br /&gt;8. Drop the dough on a floured surface so you can work the dough and shape it. Shape it with your hands to make a nice ball getting enough flour on it so it isn't sticky. Divide the ball in half and do it again. Shape the loaves by turning the dough under it's self over and over. When the dough is shaped the sides and ends will be sealed and all you will see is a nice oblong shaped loaf with smooth sides and top. Drop the loaves in your bread pans and let them rise until almost doubled. Bake in a preheated oven at 350 for 36 minutes. If you forgot to preheat 41 minutes. (gas oven).&lt;br /&gt;9. When done turn the bread out of the pan to a rack to cool. You can eat it right away (a great time for real butter) don't wrap it until completely cooled. (Condensation will make it soggy) Put in tinfoil to store on the counter. If you put it in the refrigerator it will turn into a brick. Enjoy.&lt;br /&gt;&lt;br /&gt;I've made this bread several times now, and have always only used 6 1/2 cups flour. THe dough might seem a little sticky, but it will be fluffier that way. I substituted one diced onion for the leeks because that's what I had.  And, I used my pressure cooker to cook the beans quickly.&lt;br /&gt;&lt;br /&gt;Low in fat, and high in protein, dried beans are nearly a perfect food.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:180%;"&gt;Ingredients &lt;/span&gt;&lt;br /&gt;2 cups dried Great Northern beans&lt;br /&gt;4 slices thick-sliced bacon, diced&lt;br /&gt;2 tablespoons extra-virgin olive oil&lt;br /&gt;6 cups thinly sliced leeks, white and tender green parts (2 bunches)&lt;br /&gt;2 garlic cloves, minced&lt;br /&gt;1 teaspoon salt&lt;br /&gt;Coarsely ground black pepper&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:180%;"&gt;Instructions&lt;br /&gt;&lt;/span&gt;1. Place beans in a large Dutch oven. Cover with water to 2 inches above beans. Bring to a boil. Remove from heat and let stand, covered, 1 hour. Drain beans and return to pot. Cover with cold water and bring to a boil. Lower heat to a simmer, cover and cook until tender, but not mushy, 45 minutes to 1 hour. Drain beans, reserving some cooking water. Return beans to pan.&lt;br /&gt;&lt;br /&gt;2. Place bacon in a large skillet; cook over medium-high heat until crisp. Remove with a slotted spoon and set aside. Add olive oil to skillet. Add leeks and garlic; sauté 10 minutes. Add to beans. Crumble bacon and add to beans with salt and pepper. Add cooking water if beans seem dry. Serve hot. I am not even much of a tomato soup fan, but this was delicious.  The only problem was it didn't make enough for leftovers.  It barely made enough to give each of my family members a small bowl full.  So next time I will double or triple the recipe.&lt;br /&gt;&lt;br /&gt;1 tablespoon olive oil&lt;br /&gt;1 onion, chopped&lt;br /&gt;2 carrots, peeled and chopped&lt;br /&gt;3 cloves garlic, chopped&lt;br /&gt;2 (14 ounce) cans Italian style diced tomatoes, undrained&lt;br /&gt;2 cups chicken broth or stock&lt;br /&gt;pinch of red pepper flakes&lt;br /&gt;1 teaspoon balsamic or red wine vinegar&lt;br /&gt;1 teaspoon honey&lt;br /&gt;3/4 cup evaporated skim milk, or 4 ounces 1/3 less fat cream cheese (I used the low-fat cream cheese)&lt;br /&gt;chopped fresh basil or parsley for serving (oops, forgot this)&lt;br /&gt;&lt;br /&gt;In a large pot, heat oil over medium high heat. Add onion and carrots and saute for five minutes. Stir in garlic and saute an additional minute. Add tomatoes, broth, red pepper flakes, vinegar, and honey. Season to taste with salt and pepper. Bring to a boil; cover, reduce heat to medium and simmer for 20 minutes, or until all vegetables are tender. For a creamy soup, transfer to blender and blend, or use an immersion blender directly in the pot. (Immersion blenders are a must have for soup lovers!) [I used my immersion blender, but I didn't blend until everything was perfectly smooth.  There were little chunks of carrot still and I liked it like that).  Soup can be made up to 2 days ahead of time to this point. Just before serving, add evaporated skim milk (or cream cheese of half and half) to pot. Warm through, but do not boil. This makes a really flavorful burger - I love it!!!&lt;br /&gt;&lt;br /&gt;Serves: 4&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;1 1/2 pounds ground sirloin&lt;br /&gt;2 cloves garlic, grated&lt;br /&gt;3 tablespoons Worcestershire sauce&lt;br /&gt;A handful of fresh parsely, finely minced&lt;br /&gt;Salt and pepper to taste.&lt;br /&gt;4 slices muenster cheese&lt;br /&gt;4 hamburger buns, lightly toasted&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;&lt;br /&gt;Put ground beef in a bowl. Add the grated garlic, Worcestershire sauce, parsely, and salt and pepper. Use your hand to mix the ingredients together - don't over mix or you make the patties more tough. Form four patties that are thinner in the center and thicker at the edges for even cooking. Cook the patties in a frying pan for 8 minutes, turning once. In the last minute of cooking time, top the burgers with the slice of cheese.&lt;br /&gt;Place the burgers on the buns and enjoy. Another delicious addition is to carmelize some sliced onions to place on top. Hot out of the oven I also basted them with melted butter to make them extra soft and delicious.  Also, when you are rolling the dough out into ropes before shaping, try to get it about as thin and your finger - they rise and get thick in the oven, so if you don't roll it thin enough it doesn't end up very pretzel-like.&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;4 teaspoons active dry yeast&lt;br /&gt;1 teaspoon white sugar&lt;br /&gt;1 1/4 cups warm water&lt;br /&gt;5 cups all-purpose flour&lt;br /&gt;1/2 cup white sugar&lt;br /&gt;1 1/2 teaspoons salt&lt;br /&gt;1 tablespoon vegetable oil&lt;br /&gt;&lt;br /&gt;1/2 cup baking soda&lt;br /&gt;4 cups hot water&lt;br /&gt;1/4 cup coarse salt, for topping&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;&lt;br /&gt;1. In a small bowl, dissolve yeats and 1 teaspoon sugar in warm water. Let stand until creamy, about 10 minutes.&lt;br /&gt;2. In a large bowl, mix together flour, 1/2 cup sugar, and salt. Make a well in the center and add the oild and yeast mixture. Mix and form dough. If the mixture is dry, add one or two tablespoons of water. Knead the dough until smooth, about 7 to 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 hour.&lt;br /&gt;3. Preheat over to 450 degrees F, in a large bowl dissolve baking soad in hot water.&lt;br /&gt;4. When risen, turn dough out onto a lightly floured surface and divide into 12 equal pieces. Roll each piece into a rope and twist into a pretzel shape. Once all of the dough is shaped, dip each pretzel into the baking soda solution and place on a greased baking sheet. Sprinkle with coarse salt.&lt;br /&gt;5. Imagine cooking carrots and other veges for soup in 4 minutes!  OR dry beans in 40 minutes.  I have even cooked frozen-solid meat in under an hour!  I love it!  This recipe uses a pressure cooker, but I'm sure it can be adapted. &lt;br /&gt;&lt;br /&gt;1 pound dry beans (I used black, but any would work)&lt;br /&gt;1 large onion, diced&lt;br /&gt;1 c. diced celery&lt;br /&gt;1 c. chopped green pepper&lt;br /&gt;4 garlic cloves, minced&lt;br /&gt;4 bay leaves (I didn't use these)&lt;br /&gt;4 Tbsp parsley, chopped (forgot this, oops)&lt;br /&gt;2 tsp. dried thyme, crushed&lt;br /&gt;1 1/2 tsp. salt&lt;br /&gt;1/2 tsp. crushed red pepper*&lt;br /&gt;1 tsp. ground black pepper* &lt;br /&gt;3/4 C. olive oil&lt;br /&gt;3 to 4 C. water&lt;br /&gt;2-3 C. cooked rice&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;Quick soak beans.  (I will give instructions for doing this with a pressure cooker if anyone requests it).  Drain, and set aside in pressure cooker.&lt;br /&gt;&lt;br /&gt;Place the onion, celery, green pepper, garlic, bay leaves, and seasonings in a medium mixing bowl.  Drizzle the olive oil over them and let the mixture sit at room temperature for at least 30 minutes.&lt;br /&gt;&lt;br /&gt;Pour the olive oil and the vegetables over the beans and let sit at room temp for 10 to 15 minutes (I forgot to do this too, oops).  Add enough of the water to cover the beans (I used all four cups).  Close the lid, bring to high pressure and cook for 40 minutes.  Remove the bay leaves and serve the hot beans over the rice. It was sooo yummy!&lt;br /&gt;&lt;br /&gt;RECIPE INGREDIENTS:&lt;br /&gt;1 cup all-purpose flour&lt;br /&gt;2 teaspoons baking powder&lt;br /&gt;6 tablespoons butter&lt;br /&gt;1/3 cup chocolate chips&lt;br /&gt;1 cup sugar (2/3 cup &amp;amp; 1/3 cup, added separately)&lt;br /&gt;3 tablespoons plus 1/3 cup cocoa&lt;br /&gt;1 tablespoon vanilla extract&lt;br /&gt;1/4 teaspoon salt&lt;br /&gt;1/3 cup milk&lt;br /&gt;1 egg yolk&lt;br /&gt;1/3 cup brown sugar&lt;br /&gt;11/2 cups hot water&lt;br /&gt;Whipped cream or ice cream&lt;br /&gt;&lt;br /&gt;1. Coat the inside of a 2 1/2- to 5-quart slow cooker with cooking spray. (Note: the cake's cooking time and final appearance will vary depending on your crock's size.)&lt;br /&gt;&lt;br /&gt;2. Whisk together the flour and baking powder in a medium bowl and set aside. In a large bowl, melt the butter and chocolate chips in the microwave or over a pan of simmering water and mix well.&lt;br /&gt;&lt;br /&gt;3. Whisk in the 2/3 cup of sugar, 3 tablespoons of cocoa, vanilla extract, salt, milk, and egg yolk. Add the flour mixture and stir until thoroughly mixed.&lt;br /&gt;&lt;br /&gt;4. Pour the batter into the slow cooker and spread it evenly. In a medium bowl, whisk together the remaining sugar, brown sugar, cocoa, and hot water until the sugar is dissolved.&lt;br /&gt;&lt;br /&gt;5. Pour the mixture over the batter in the slow cooker. Cover and cook on high for 1 to 2 hours, depending on the size of the crock pot.&lt;br /&gt;&lt;br /&gt;6. Even when done, the cake will be very moist and floating on a layer of molten chocolate, but you'll know it's ready when nearly all of the cake is set and the edges begin to pull away from the sides of the pot. Add salt and pepper. Mix in grated or diced cheese, vegetables, and meat of your choice. It is really versatile- you can add what (and how much) you like.&lt;br /&gt;Bake at 400* for 35-45 minutes.&lt;br /&gt;After 15 minutes I like to place sliced tomatoes on top and sprinkle with grated parmesan cheese. Continue baking until egg mixture is set and cheese is crispy and brown. Let it stand for 5 minutes before cutting.&lt;br /&gt;&lt;br /&gt;This was something simple and really yummy! I thought it was yummy too!&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;3 cloves garlic&lt;br /&gt;1 medium onion&lt;br /&gt;4 tablespoons oil&lt;br /&gt;2 cans mexican-style tomatoes, chopped&lt;br /&gt;2 cans stewed tomatoes, chopped&lt;br /&gt;4 cups chicken broth&lt;br /&gt;2 cups beef broth&lt;br /&gt;1 1/2 cups chicken...chopped (I cooked the chicken in lime juice with salt and pepper)&lt;br /&gt;1 tsp. cumin&lt;br /&gt;1 tsp. chili powder&lt;br /&gt;cilantro leaves...from about 10 stalks of cilantro (chopped)&lt;br /&gt;&lt;br /&gt;10-15 corn tortillas...cut into bite size pieces and fried in oil right before serving&lt;br /&gt;&lt;br /&gt;grated mozzarella (about 1 cup)&lt;br /&gt;1 ripe avocado (sliced)&lt;br /&gt;&lt;br /&gt;Saute garlic and onion in oil. Add tomatoes, broths, cumin and chili powderm mixing well. Add cilantro. Simmer one hour on medium heat. Just before serving add chicken and heat all the way through.&lt;br /&gt;&lt;br /&gt;Heat oil and drop in cut up tortilla chips...they will cook quickly...remove from oil and allow to drain on some napkins. Salt them after cooking.&lt;br /&gt;&lt;br /&gt;When you serve the soup...top each bowl with some fried tortilla chips, some grated cheese and a few avocado slices. Bake at 350 for 6 minutes. Take out of oven and sprinkle one bag of milk chocolate chips on baked half. Then drizzle melted caramels &amp;amp; milk mixture over top. Pat remaining batter on top and bake for 15 more minutes. Stir in the chocolate chips and pour batter into a well greased 12 cup bundt pan.&lt;br /&gt;Bake for 50 to 55 minutes, or until top is springy to the touch and a wooden toothpick inserted comes out clean. It is SOOO yummy!&lt;br /&gt;&lt;br /&gt;3 to 4 pound pork roast&lt;br /&gt;1 tsp. salt&lt;br /&gt;1 tsp. cumin&lt;br /&gt;1 tsp. paprika&lt;br /&gt;1 tsp. black pepper&lt;br /&gt;1/2 tsp. ground red pepper (I didn't add this)&lt;br /&gt;1 med onion, thinly sliced&lt;br /&gt;1 med green bell pepper, cut into strips&lt;br /&gt;1 18-oz. bottle bbq sauce (I used Sweet Baby Rays Honey BBQ)&lt;br /&gt;1/2 c. packed brown sugar&lt;br /&gt;&lt;br /&gt;Trim excess fat from pork. Combine salt, cumin, paprika, black pepper and red pepper in small bowl; rub over roast.&lt;br /&gt;&lt;br /&gt;Place onion and bell pepper in slow cooker; add pork. Combine bbq sauce and brown sugar; pour over meat. Cover; cook on low 8 to 10 hours.&lt;br /&gt;&lt;br /&gt;Transfer roast to cutting board. Trim and discard fat from roast. Using 2 forks, pull pork into coarse shreds. Add the rest of the ingredients to the flour mixture. Beat until smooth. Spray and heat up a medium sized frying pan (to about medium heat). Pour 1/4 cup batter into the pan, rotating it until the batter covers the entire bottom. Cook until brown on that side, flip and cook the other side. Spread with sliced fruit or fruit puree and whipped cream. Sprinkle with powdered sugar and eat.&lt;br /&gt;Alternate Topping: Nutella spread topped with sliced strawberries and bananas. Combine flour, baking soda, baking powder, cinnamon and salt; add to pumpkin mixture, mix well. Fold in chocolate chips. Fill greased or paper-lined muffin cups ¾ full. Bake at 400 degrees for 16-20 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack. 115 degrees)&lt;br /&gt;2/3 cup nonfat dry milk (instant or non-instant)&lt;br /&gt;2 tablespoons dry yeast&lt;br /&gt;1/4 cup sugar&lt;br /&gt;2 teaspoons salt&lt;br /&gt;1/3 cup butter, shortening, or margarine&lt;br /&gt;1 egg&lt;br /&gt;5 to 5 ½ cups all-purpose flour, or bread flour&lt;br /&gt;&lt;br /&gt;In large bowl or electric mixer, combine water and milk powder; stir until milk dissolves. Add yeast, then sugar, salt, butter, egg, and 2 cups flour. Mix on low speed until ingredients are wet, then for 2 minutes at medium speed. Add 2 cups flour; mix on low speed until ingredients are wet, then for 2 minutes at medium speed. (Dough will be getting stiff and remaining flour may need to be mixed in by hand). Add about ½ cup flour and mix again, by hand or mixer. Dough should be soft, not overly sticky, and not stiff (It is not necessary to use the entire amount of flour).&lt;br /&gt;&lt;br /&gt;Scrape dough off sides of bowl and pour about one tablespoon of vegetable oil all around sides of bowl. Turn dough over in bowl so it is covered with oil. (This helps prevent dough from drying out). Cover with plastic and allow to rise in warm place until double in size, about 45 minutes.&lt;br /&gt;&lt;br /&gt;Scrape dough out onto floured board. Turn dough over so it is floured on both sides; gently flatten to about 1 inch thick. With rolling pin, roll out to a rectangle about 18 inches long, 8 inches wide, and ¼ inch thick. Brush with melted butter. With pizza cutter or very sharp knife, cut dough in half to make two strips about 4 inches wide. Make cuts through strips of dough every 2 inches, making about 18 pieces of dough.&lt;br /&gt;&lt;br /&gt;Starting with short end, roll up one piece of dough, with butter on the inside. Place roll on parchment-lined pan with other short end down on the paper. Repeat with remaining pieces of dough. Be sure all rolls face the same direction on baking pan. I also cooked it for at least 40 mins to make sure everything was really tender, and I didn't add parsely to the biscuit mix.&lt;br /&gt;&lt;br /&gt;Chicken and Dumplings&lt;br /&gt;&lt;br /&gt;1 1/2 pounds chicken breast tenders&lt;br /&gt;1 tablespoon olive oil, 1 turn of the pan&lt;br /&gt;2 tablespoons butter&lt;br /&gt;1 russet potato, peeled and diced&lt;br /&gt;2 medium carrots, peeled and diced or thinly sliced&lt;br /&gt;1 medium onion, chopped&lt;br /&gt;1 rib celery, diced&lt;br /&gt;1 bay leaf, fresh or dried&lt;br /&gt;Salt and freshly ground black pepper&lt;br /&gt;1 teaspoon poultry seasoning, 1/3 palm full&lt;br /&gt;2 tablespoons flour, a handful&lt;br /&gt;1 quart chicken broth or stock, canned or paper container, preferred brand Kitchen Basics&lt;br /&gt;1 small box biscuit mix(preferred brand Jiffy Mix)&lt;br /&gt;1/2 cup warm water&lt;br /&gt;Handful flat-leaf parsley, chopped&lt;br /&gt;1 cup frozen green peas&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;&lt;br /&gt;Dice tenders into bite size pieces and set aside. Wash hands.&lt;br /&gt;Place a large pot on stove over medium high heat. Add oil, butter, vegetables and bay leaf and cook 5 minutes, stirring frequently. Season mixture with salt, pepper and poultry seasoning. Add flour to the pan and cook 2 minutes. Stir broth or stock to the pot and bring to a boil. Add chicken to the broth and stir.&lt;br /&gt;&lt;br /&gt;Place biscuit mix in a bowl. Combine with 1/2 cup warm water and parsley. Drop tablespoonfuls of prepared mix into the pot, spacing dumplings evenly. Cover pot tightly and reduce heat to medium low. Steam dumplings 8 to 10 minutes. Remove cover and stir chicken and dumplings to thicken sauce a bit. Its probably more a summer recipe.&lt;br /&gt;&lt;br /&gt;GRILLED LEMON CHICKEN SALAD&lt;br /&gt;Ina Garten&lt;br /&gt;&lt;br /&gt;INGREDIENTS&lt;br /&gt;• 2 pounds Grilled Lemon Chicken (recipe below)&lt;br /&gt;• 1/4 cup freshly squeezed lemon juice (1 large lemon)&lt;br /&gt;• 1/4 cup good olive oil&lt;br /&gt;• 1 cup raw sugar snap peas, stems and strings removed&lt;br /&gt;• 1/2 red bell pepper, julienne&lt;br /&gt;• 1 lemon, thinly sliced&lt;br /&gt;• 1/4 teaspoon kosher salt&lt;br /&gt;• 1/4 teaspoon freshly ground black pepper&lt;br /&gt;DIRECTIONS&lt;br /&gt;Slice the chicken breasts diagonally in 3/8 - inch thick slices.
